So in my feeble attempt to get more veggies into my family I have decided to institute Meatless Mondays I found some really nice eggplant on sale this week so I decided to make eggplant parm. If this goes over well this will be added to our garden next year. We already have fresh basil on the deck so that's going in there too! YUM YUM. I hope my kids eat it. If not, more for us!!!
